Our latest treasure? The Brebiole
Brebiole means small ewe in old French; well, apart of its small cylindrical form, there is nothing small about this cheese. Its taste is delicate with mushrooms, butter, cream aroma finishing on a slightly taste of salt. Who can resist? No one! The mild flavour will develop in a fine spicy end note as aging evolves. The wrinkled and tender mould crust introduces a savory white, creamy, smooth, melts in your mouth kind of a paste.
This small sheep milk log is the very first one on the market. It reveals some honey smell scent, frest cream savor, butter odour and fresly baked bread smell. Their is no apple ingredient in this cheese’s recipe. Try it at any given time of the day, as it pleases you (on a plate, “chaud”, …) along with cider or light wine.
