This firm paste delight sparkles in your mouth sweet roasted flavors enhanced by aging. We sow some of our non-filtered juice made from the sweet and mature apples growing in our own orchard before adding it to the pasteurized sheep’s milk, to give this firm paste cheese a touch of sweetness. To create its memorable crust, we daily hand-wash every rind with a mixed prepared from, once again, non-filtered juice made from our orchard. This easy- going delightful cheese changes the definition of refinement while melting in your mouth its unique character.
